Each oyster filters up to 50 gallons of water per day, stripping away excess nitrogen and phosphorus that can fuel harmful algal blooms. Their farm structures double as reef habitat, giving fish, crabs, and countless other species a place to shelter and feed. Many growers even collaborate with marine biologists to seed wild reefs and rebuild shellfish populations lost to past overharvesting.
